Recipes: Moroccan Chicken

INGREDIENTS:

10-2 organic chicken drumsticks
1 onion, chopped
2 tomatoes, quartered
3 garlic cloves, chopped
1/3 cup vegetable or chicken stock
2 tsp coriander powder
2 tsp cumin powder
1/2 tsp cinnamon powder
1/2 tsp cardamom powder
1 tsp Himalayan salt
2 tbsp tomato puree
15 oz pitted green olives
1/4 cup golden raisins

2 C uncooked rice, quinoa or couscous (optional)


DIRECTIONS:


Mix the spices, cumin, coriander, cardamom and cinnamon. *Time saver: I buy a Moroccan spice blend. Toss the chicken in the spices. Add the chicken to the slow cooker followed by the rest of the ingredients reserving olives and raisins for later on.

Set the slow cooker on high and cook the chicken for 3 hours. After the 3 hours add the rest of the ingrediens and cook for another hour on high. *Time saver: use an Instant Pot and pressure cook on the poultry setting (or 15 mins) followed by 5 mins of release time.

Serve over some brown rice, couscous or quinoa.
